Tri-tip steak and Stir Fry Veggies

Tri-tip Steak (any kind, but for this recipe, I used tri-tip)
1 red bell pepper, sliced
1 yellow onion, sliced
3 zucchini squash, diced
1/4 cup julienned sun-dried tomatoes, packed in olive oil
2 TBL coconut oil
2 TBL dried basil (you can use 1 cup fresh basil)
Sea salt and pepper to taste
2 TBL water

Season tri-tip steak with salt and boil until tender (plan for about an hour, depending on how much steak).

Preparing the veggies - Heat coconut oil in a large skillet over medium heat. Add onions and bell pepper and saute until the onion starts to caramelize. Add the remaining ingredients and saute together for about 4-5 minutes, or just until the zucchini become tender (not mushy).

While the veggies are cooking, place steak on grill (or in broiler) to sear in the flavor. Don't leave the steak on the grill for more than 3-5 minutes per side, because it's already fully cooked. If left too long, it will become dried out. For this recipe, the steak is basted in a combination of Honey BBQ sauce and A-1 sauce.

Homemade Steak Fajitas

This is a meal that we eat as it is below. We don't add the tortillas, sour cream, etc., as this is a healthier option. This is the basic recipe for the actual meat, peppers, and onion.

1 large red bell pepper (sliced)
2 large green bell peppers (sliced)
1 medium yellow onion (chopped)
1/2 package of Tyson frozen steak strips (these are already cooked strips)
2 tsp. Olive Oil

In a skillet, heat olive oil. Add steak strips, and cover. Let the strips heat alone for 5-10 minutes on medium heat (until thawed).

Add peppers and onion, stir so the meat doesn't stay on the bottom of the skillet. Cover, and let cook on medium heat until the peppers are tender (usually about 15 minutes). Stir occasionally.

Pasta with Italian Sausage

Another meal that I cook in my Wolfgang Puck Rice Cooker.

1 pound Italian sausage
1 jar of pasta sauce
2 cups of water
1 box of mostaccioli rigati
2 tsp olive oil

Heat cooker and place olive oil in the bottom of the container.

Cut up sausage into 1-inch pieces. Brown in the olive oil.


When the sausage is browned, pour in the pasta, pasta sauce and water.




Cook until pasta is tender (usually about 30 minutes).

Granny's Cherry Cream Cheese Pie

This is a recipe that my grandma created.

1 pie shell (homemade or frozen)
1 can of Comstock Cherry Pie Filling
2 bananas
1 pkg. Dream Whip
1/2 pkg. Philadelphia Cream Cheese

Cook pie shell until brown. Make sure to poke small holes in crust with a fork before cooking.

Make Dream Whip according to box directions. After, slowly mix the cream cheese in with mixer on low setting until blended. Mixture will have some bumps from the cream cheese. Place in fridge until needed.

Slice bananas and line the entire shell, even the sides. Cover the bananas with the cherry pie filling, leaving a spoonful of the filling for the top of the pie. Put Dream Whip/cream cheese mixture on top of the pie, creating a small dip in the center with the spoon. Place the spoonful of cherry pie filling in the dip.

Chill for at least an hour before serving.

Chicken with Apples

1-2 medium size RED apples (any variety)
1 package of chicken tenderloins
Salt
Pepper
2 tbl Olive Oil

Chop apples into small pieces, disposing of the core. Set aside.

Season chicken tenderloins and place in heated skillet with olive oil. Cover with lid and cook on medium heat. Covering with a lid is important to keep the chicken moist.

When it is time to turn the chicken over (about 3-4 minutes), turn chicken and place apples in the pan. They will become slightly soft and start to carmelize. When the chicken is done, the apples are as well.

You can also grill pineapple as a side - just place sliced or chopped pineapple in a heated uncovered pan for 3-5 minutes on each side.

Fall Off the Bone Ribs

I cook these ribs in my Wolfgang Puck Rice Cooker

1 bottle of BBQ sauce
2 cups water or broth
1 rack ribs, cut
1 tbl olive oil
Rib Rub

Set up the rice cooker, place 1 tablespoon of olive oil in and turn to "cook" mode. As the cooker is warming up, cut up the ribs and season them with your favorite rub. After this, place the ribs, meat-side down, so they brown on top. You might have to remove some of the ribs and repeat this process depending on how many ribs you're cooking.

Once all of the ribs have been browned, add 1 bottle of BBQ sauce, plus the 2 cups of water or broth. Make sure the liquid covers all of the ribs. If you want thicker sauce, add extra BBQ sauce and less liquid.

Ribs with water and BBQ sauce, ready to cook.


Cook for 1 hour on "cook" mode. Ribs will fall off the bone.
